How to make rice pudding in a rice cooker

Making black sticky rice pudding couldn’t be easier, and you likely have many, if not all, of the ingredients in your pantry:

Ingredients

  • 1 cup black rice

  • 400 mL coconut milk

  • 3 tbsp brown or coconut sugar

  • A pinch of salt

  • Toppings of your choice

Method

  1. Rinse the rice under cold water to get rid of excess starch, then cook it according to the instructions on the package.

  2. Add the cooked black rice, coconut milk, sugar, and salt to the rice cooker and stir.

  3. Close the lid and set it to ‘Sticky Rice’, ‘Porridge’, or ‘Short Grain Rice’. Let it cook until most of the liquid has been absorbed. Stir it to ensure it’s all well combined and the texture is to your liking.

  4. Serve and garnish. Fresh mango and coconut milk are the usual toppings for rice pudding, but you can pair the dessert with whatever your heart desires. Strawberries and coconut flakes work well, as do mixed berries and maple syrup. Caramelised banana adds to the gooeyness of the dish, or if you prefer mixing textures, frozen coconut chunks are the perfect crunchy companion to the soft rice.

Tips for perfecting your black rice cooker pudding

  • Soak the rice for 30 minutes before cooking

  • Use full-fat coconut milk or cream

  • Stir it a couple of times as it cooks

  • Let it sit for 10-15 minutes after cooking

  • Top with vanilla extract for extra sweetness.
