9 Easy One-Pot Recipes for a Quick Dinner

After a busy day of work, the last thing most of us feel like doing is spending hours in the kitchen. However, there’s nothing like a delicious, homemade meal to finish off the day on a good note. So, what do you compromise on: your time to relax or a tasty dinner? With our one-pot recipes, the answer is… neither!

From fresh pasta dishes to vibrant curries and even sweet desserts, discover our favourite one-pot meals:

1. Vegan Kale, Coconut & Beetroot Curry

This vegan curry takes 15 minutes to prep and 20 minutes to cook and it is the ultimate comfort food in a bowl.

The star of the curry is the beetroot, which gives it a deep ruby-red colour and an earthy flavour that pairs flawlessly with the sweetness of the coconut milk. The chewy lentils are the protein and the kale adds a contrasting touch of dark green to the dish.

Serve the curry with rice and top with fresh coriander, fried shallots and a dollop of plant-based Greek yoghurt for a nutritious vegan one-pot meal.

2. Prawn And Rocket Spaghetti

For many of us, pasta is already a go-to quick dinner, but you can make it even easier to cook by using a crockpot – and this prawn and rocket spaghetti is proof.

Preparing this fresh and healthy one-pot meal only takes 5 - yes, 5 - minutes of your time and your multicooker does the rest. Start by cooking the pasta and, once done, set it aside. Cook the prawns in the sauté setting until nicely browned, add the cherry tomatoes and finish off with a handful of rocket and drizzle of olive oil.

The final product? A fresh, colourful pasta dish that is perfect for hot summer days!

3. Herb Roasted Chicken

There is no shortage of chicken one-pot recipes and this one is up there with the quickest to make, taking only 10 minutes to prep.

All you need is a whole chicken, lemons, honey and a few staple seasonings. Prepare the chicken by tying the legs together with cooking twine, combine the seasoning mix in a small bowl and place everything in the crockpot. Let it pressure cook for 22 minutes and after waiting for the pressure to naturally release, brush a layer of oil and air-crisp for a few minutes for that irresistible fried-like texture.

Serve with some vegetables, rice or a salad and there you have it - a healthy, classic dinner that everybody loves.

4. Risotto Al a Funghi

Have a dinner party coming up but don’t know what to cook? An authentic Italian-style risotto is always a crowd-pleaser and with a multicooker, it’s easier than ever to make.

This one-pot risotto spotlights mushrooms and although you can use the good old white button, we recommend going for a variety of wild mushrooms like porcini, shiitake and oyster if you want to add even more texture and earthiness to the dish.

There are two steps to making this risotto: first, sautéing the shallots and mushrooms, and second, adding the risotto and letting it cook for 20 to 30 minutes. A sprinkle of salt and pepper, and it’s ready to eat.

5. Vegetarian Tofu ‘Meatballs’ in Tomato Sauce

Sweet and spicy, these tofu ‘meatballs’ are another great vegan one-pot meal and a delicious alternative to traditional Italian meatballs.

The recipe uses tofu and shiitake mushrooms as the main ingredients, which you season with salt, pepper, soy sauce and sesame oil, to then combine until you have a mixture sticky enough to form individual balls.

No meatball recipe is complete without tomato sauce, so while your ‘meatballs’ cook in your multicooker until golden brown, you can make your sauce using ripe tomatoes, basil, red chilli and a few other ingredients

This fruit crumble is a slow-cooker, one-pot recipe with a warm spice from the nutmeg, ginger and cinnamon, fresh sweetness from the apples and satisfying crunch from the walnuts.

Leave it to cook for 4 to 5 hours and then pair it with creamy custard or a scoop of ice cream to quench all your sugar cravings.

You can never go wrong with a sticky toffee pudding, especially when you let it slowly soak up the flavours and cook to perfect texture for 2 to 3 hours.

Making this dessert in a slow cooker means most of the moisture will stay inside the pot, making the final product as gooey as ever. Eat it by itself or with ice cream for an extra bit of sweetness!
